Preparation of Quick Lime Mousse with Yogurt in Thermomix

1. Step 1: Whip the cream
2. Place the butterfly on the Thermomix blades.
3. Pour the very cold cream into the glass and whip it at speed 3.5, without setting any time. Keep a constant eye on it until it is firm, but avoid cutting it.
4. Remove the whipped cream and keep it in the refrigerator.
5. Step 2: Prepare the lime cream
6. Without washing the glass, add the quark, Greek yogurt, icing sugar, lime juice and zest. Mix for 20 seconds at speed 4 until the mixture is homogeneous.
7. Add the reserved whipped cream to the glass and mix manually with circular movements using the spatula to maintain the aerated texture.
8. Step 3: Prepare the cookie and coconut crumbs
9. Place the shortbread cookies in the clean glass and blend them for 5 seconds at speed 5.
10. Add the coconut flakes to the glass and mix for 10 seconds at speed 3 to integrate both ingredients.
11. Step 4: Assembling the dessert
12. In individual glasses, add three tablespoons of the cookie and coconut mixture as a base.
13. On top of the base, place three tablespoons of the lime cream.
14. Repeat the layers (cookies and cream) in each glass.
15. Garnish with a few crumbs of the cookie-coconut mixture, a few additional coconut flakes and a wedge of lime.
